The ingredients needed to prepare Caramelized Carrots:
- Provide 1/2 c hazelnuts,chopped
- Prepare 3 lbs small carrots, peeled
- Provide 1 garlic clove, very thinly sliced
- Take 1/2 tsp ground ginger
- Take 1/2 tsp smoked paprika
- Use 2 T plus 1 tsp olive oil
- You need 1/2 salt1/4 tsp black pepper
- Prepare 1/4 c packed fresh flat-leafed parsley, chopped

- Preheat oven to 350°F.
- Place nuts on a baking sheet and roast 10-12 min. Remove nuts and set aside to cool.
- In same pan, toss carrots with garlic, ginger, paprika, 2 T oil, salt and pepper. Cover pan tightly and roast 30 min. Uncover and roast another 20-25 min, until tender.
- Remove carrots from oven and drizzle with 1 tsp oil, tossing well to coat. Transfer to plate and sprinkle with nuts and parsley.
